In Summer 2024, Head Chef Ronald Pericone at the Hilton Baltimore BWI Airport Hotel reached out to Procure Impact to share amazing news: he was going to create hot honey wings using local ingredients from Hon’s Honey located in Baltimore.
After hearing about PM Hotel Group's pledge towards the Dignity of Work efforts between Procure Impact and the AHLA, Pericone and his F&B Director, Paul Kelsey, decided to take it one step further: advance Hon's Honey's mission to provide dignity and purpose to female survivors of trauma by infusing their life-changing honey into an extraordinary culinary experience.
After winning big with the staff during a trial run, Pericone’s Hot Honey Habanero Wings became a regular menu item. This spurred Pericone and Kelsey on to purchase more and more honey from Hon’s to experiment with flavors, drinks, meals, and desserts.
On Jul 29, 2024, Amanda Hoy, Director of Rooms, hosted a Beautiful Manager’s Reception dinner for guests and some of Baltimore's pillars of the community to experience the magic of Hon's Honey products through Pericone's culinary showcase featuring 3 different honey pizzas, their infamous hot honey wings, honey chicken and waffles, two honey infused gelatos, and a cocktail and mocktail.
Mandy Memmel, Executive Director of Hon’s, was able to attend the event and speaks highly of the work the BWI team put into showing off their ‘Worker Bees’ and honey. “What an incredible evening. We were blown away by the hard work and passion that went into the night. We felt loved and supported and look forward to a thriving partnership moving forward”, she said.
But why honey?
It all started when General Manager, Keith Moses, took PM's Dignity of Work Pledge to a new level: inspiring and challenging his entire staff to use the Procure Impact Marketplace in any way they see fit. Moses describes his property and staff as “doers” and “impact makers” as they often feature ways in the lobby and their pantry store for guests to support local businesses and causes. As a prominent hotel in Baltimore, Moses believes it’s his duty to showcase the best of Baltimore to every guest, leading Pericone to jump on the opportunity to support a local business with an even better cause.
Hon’s Honey is a social enterprise dedicated to giving dignity and purpose to women survivors of trauma— addiction, trafficking, generational poverty, and abuse. Hon’s Honey is an employment program of a nonprofit called The Well. Before being employed at Hon’s Honey, women commit to a holistic healing process through free counseling, workshops, mentorship and a life development program at The Well.
